Blueberry Cobbler
Ingredients:
3 cups fresh blueberries (you can also use frozen)
⅓ cup orange juice
3 tablespoons white sugar
⅔ cup all-purpose flour
¼ teaspoon baking powder
A pinch of salt
½ cup butter, softened
½ cup white sugar
1 egg
½ teaspoon vanilla extract
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare Blueberries: In a bowl, mix the blueberries, orange juice, and 3 tablespoons of sugar. Pour this mixture into a greased 8-inch square baking dish.
Make Batter: In another bowl, combine the flour, baking powder, and salt. In a separate bowl, cream the butter and ½ cup of sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the flour mixture to the butter mixture until well combined.
Assemble: Drop the batter by spoonfuls over the blueberry mixture. Spread it out as evenly as possible.
Bake: Bake in the preheated oven for about 35-40 minutes, or until the topping is golden brown and the blueberries are bubbly.
Serve: Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
