Beef and Noodles Ingredients: 1 pound beef chuck roast or sirloin, cut into 2-inch chunks Salt and pepper, to taste 2 tablespoons flour 2 tablespoons olive oil 1 large onion, chopped 3 cloves garlic, minced 4 cups beef stock 1 bay leaf 1 teaspoon fresh thyme (or ½ teaspoon dried thyme) 12 ounces egg noodles Optional: 1 cup frozen peas Instructions: Prepare the Beef: Season the beef chunks with salt and pepper, then toss them in flour until evenly coated. Brown the Beef: In a large pot, heat the olive oil over medium-high heat. Add the beef chunks and brown them on all sides. Remove the beef and set aside. Cook the Aromatics: In the same pot, add the chopped onion and cook until softened. Add the minced garlic and cook for another minute. Simmer: Return the beef to the pot. Add the beef stock, bay leaf, and thyme. Bring to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender. Cook the Noodles: About 15 minutes before the beef is done, cook the egg noodles according to the package instructions. Drain and set aside. Combine: If using, add the frozen peas to the beef mixture and cook for an additional 5 minutes. Remove the bay leaf. Stir in the cooked egg noodles until well combined.
