This is how to make my iconic butter chicken

After you try this, there's no other butter chicken recipe you're gonna need. Grab your chicken thighs and your ginger and garlic

your spices and some yogurt. This is gonna tenderize the meat and make it super soft

Then place these on a wire rack and into a hot grill. For the base, add some butter and oil

The oil just helps the butter not to burn. And then your whole spices. Then once they're all toasty, add in your onions

Brown these off with some ginger and garlic. Then add in your tomato paste and your spices

You really wanna make sure you cook out your tomato paste until it darkens in color. And this also helps the spices bloom

making them so much more fragrant. Then once it's a deep red color, add in your tinned tomatoes

and then cook this down until you can start seeing the oil split from the pan

Add your charred chicken back into the pan and don't forget those chicken juices at the bottom

And then stir in your heavy cream and dried fenugreek. Mix this all together until it's luscious and creamy

Season this with salt if you need it and finish it off with some coriander. I love to have this with some hot buttered naan
