Hey everyone, welcome back to my kitchen where everything is scratch made and home preserved or almost everything
0:16
I'm Jenny and today I have Three slow cooker recipes for you stuff. I like to make in the crock pot and you might too
0:26
So pull a chair up to my counter and let's get started Okay, the first one I'm going to make is cabbage soup
0:38
I have just put in one of these crock pot liners for easy cleanup
0:42
Actually, it's not cabbage soup. It's more of a boiled dinner, but I'm making it in soup form because I absolutely love
0:50
a boiled dinner. But then when you get it, you've got to cut it up to eat it anyway
0:55
So I'm going to go ahead and just make everything bite-sized. So I'm putting in fresh onions
1:03
But if you don't have fresh onions, you can certainly use freeze-dried. Two small onions
1:08
You can do two small or one large. Because in this house, we love onions
1:19
I don't know about yours. As usual, whenever you're making something, if I've used something that you don't like
1:25
leave it out or substitute it for something that you do like. Did you guys eat boiled dinner when
1:30
you were growing up? I did. I love it. I still love it. So here's another old-fashioned kind of remake
1:39
revamping of the old. Okay all the windows are open today. It's getting ready to storm
1:46
We finally hit the cool down. It's only in the 70s this morning. It's supposed to rain today. It's
1:53
very dark and gloomy. And now I have cabbage. So I'm just chopping it up bite-sized. That
2:02
was part of a wedge. I had a large cabbage and I used part of it for something else
2:07
Tacos or something. There comes the rain. I love the chop and drop recipes
2:23
Let me tell you, ham, every time I cook a ham, I take the leftovers and I keep them
2:31
up, put them in separate little bags and keep them in a freezer bag. This makes it easy for dinners
2:36
So I just take out one bag and I can toss in my ham
2:40
This works great when you're making green beans
2:53
Or greens Any greens Okay, I'm going to put in a couple large carrots that I've chopped
3:08
And that's it That's all that goes into boiled dinner You can put celery in here if you like. I don't know how you grew up with your boiled dinner
3:15
We didn't put celery in ours, and we didn't put peppers or anything like that in ours
3:20
This was all that went in our boiled dinner. So I'm going to put some chicken broth in here. Oh, potatoes. Potatoes go in boiled dinner, so I'll put those in later
3:28
Okay, so I'm going to use water and chicken bouillon, and then I'm going to cook this on low for eight hours
3:35
And at the four hour mark, I am going to put my potatoes in and I'll always put in some Yukon's
3:42
Okay, I'm just gonna put on some bouillon And put in some black pepper
3:49
I'm not gonna put any salt in because of the bouillon in the hand I'm gonna go ahead and set this and at four hours in I will put in the
4:00
Potatoes I love this stuff. Oh my gosh. My grandma used to make it all the time. So did my aunt
4:10
I don't remember my mom making it as much. I don't think it was something she was crazy about
4:17
If you don't like ham, you could use smoked turkey leg in here
4:23
Any kind of meat you like, but the ham gives it a nice smoky flavor. I just love it
4:27
One more thing I wanted to say about this boiled dinner is this is also really good with smoked sausage or kielbasa and a can of stewed tomatoes I sometimes eat it that way also
4:51
Okay, I have my crock pot lined. This is going to be the easiest potato soup in the world
4:57
one bag of diced southern style hash browns. Not with peppers. Not the O'Brien kind
5:05
You can use those if you like. I'm going to put those in along with
5:10
one diced onion. One can of diced green chilies. Open this up. I'm not going to drain it
5:22
I want that chili flavor in here. So this this is like the third or fourth time I've made this particular potato soup. I was up in Black Canyon City, Arizona
5:34
And I went to the Rock Springs Pie Company and they had a soup. Their potato soup was like this. So I came home and recreated it the way I
5:42
What I thought they put in it and how it tasted It was pretty good and I could tell it was more instant style. I don't usually make an instant style soup
5:51
But I'm going to go ahead and just put the whole can in. So the green chilies, and here's the other thing
5:59
Country gravy mix. You want the sausage flavor. Because it gives it that smoky flavor in there
6:08
I'm going to use two. Because this is going to be the main thickener for the soup
6:21
Plus it gives a really good flavor. And then I'm going to put in chicken broth
6:35
So for my chicken broth, of course I'm using water and powdered chicken bouillon
6:41
So I'm going to put that in. FYI, the green chilies are mild
6:47
There is no heat in them. I know people are going to ask
6:53
I'm also going to put in a teaspoon of kosher salt. It'll probably need more later
7:00
I'm putting in a teaspoon of onion powder. And that's it. I'm just going to let this cook
7:09
It doesn't seem like a lot of liquid, but I'm going to tell you right now
7:14
you can add a little bit more if you like, but let it cook for a while first
7:18
These potatoes are frozen. They're going to emit some water. You can put this on low for 6 to 8 hours, or you can put it on high for 4 hours
7:30
It is 2 o'clock, so I'm going to go ahead and put it on high. And this cooks pretty darn fast
7:36
But I am telling you what, this is so good. I never would have thought to make an instant kind of soup with hash browns for potato soup
7:44
because we like it traditional, but so good. I love this soup
7:48
Okay, this has been going for three hours. I am now going to take a can of evaporated milk
7:55
Evaporated milk works best for this, but I don't like to cook it in here for the whole time
8:00
You can also put a brick of cream cheese in here if you like. But otherwise, doing it this way kind of makes it like you're pulling from your stash, your freezer and cupboard
8:12
So I'm going to cook it for one hour longer. At this point, if you wanted to thicken it, you could mix that milk with a little bit of cornstarch if you want it thicker
8:27
I don't tend to like my potato soup super thick. So I do want to taste for flavoring, though, because I may need to add a little bit more salt
8:42
I actually think that's good. One more hour and we are good to go
8:48
Okay, our potato soup is done. It looks creamy and delicious. Now, just so that you know, I put a little bit extra chicken broth in here
8:58
because I don't like it quite as thick, but you don't have to do that. You can keep it just like it is
9:03
I will put the recipe in the description box below for the thicker style and if you want to add more chicken broth you can This is so good It smoky from the peppers and from the gravy mix I like it just like this I
9:17
not going to add cheese to mine. My husband may feel differently but I cannot wait to eat this
9:24
I've tasted it a whole bunch and oh yum. Now like I said I don't normally do a lot of instant
9:32
recipes or shortcuts, but this is really good. But the gravy packets make a huge difference. It is delicious
9:42
And if you get the sausage-flavored country gravy, oh, yum. You could also
9:49
put ham in here, or you could put sausage in here, serve it with a fried egg on top, and eat it for breakfast
9:59
It is good. I love this. and it's hot. Ooh, is it hot
10:04
Just a different spin on potato soup. I did add a teaspoon of garlic powder
10:09
or a half a teaspoon of garlic powder and a teaspoon of onion powder to this. And then I added a little bit more salt
10:15
So salt and pepper to taste, but I will put the garlic powder and the onion powder
10:19
in the recipe when I write this for you. Okay, he's going to do his taste test after
10:23
My teeth are full of chilies. This is very hot. It's very, very hot, I say
10:28
Potato soup is not his favorite. so don't do that but absolutely delicious like always baby well do you like it with the gravy mix in it and green
10:44
chilies i taste every bit of that i taste the gravy mix it tastes smoky and it does the potatoes
10:49
are perfectly cooked it's just is it you're doing the same thing every time it's a different outcome
10:56
Now this is absolutely wonderful, good flavor. Like I said, potatoes are perfectly cooked
11:02
These are made with the hash brown potatoes. I think that is a great idea, a great shortcut for the hash browns
11:09
Some homemade bread and butter would be perfect with this. I will make this potato soup again. Definitely
11:16
This potato soup is going to go into my rotation. Even though my very favorite one is the country ham and potato soup, this is really good in
11:23
a close second. Okay, and the third crock pot meal I'm going to make is another soup because it is soup
11:38
season and soup is my favorite. This one is a mushroom and zucchini bisque
11:46
So, one onion. Okay, zucchini going in. the zucchini I have left the peel on and cut them into half moons about a half
11:57
inch thick you don't want them too thin because they will just disintegrate and
12:04
I'm using about three medium-sized zucchinis here so if you've got leftover zucchinis left in your refrigerator that you're still wondering
12:13
what to do with or maybe you've frozen them in some nice slices soup is the
12:22
excellent thing to do with zucchini. Okay I've got eight ounces of white button
12:32
mushrooms. You can use cremini, whatever kind of mushroom you like. This is what I
12:36
have on hand. I rinsed mine and removed the stems. I don't like the
12:44
stems. They're kind of woody and then I just sliced them. If you don't mind the
12:48
stems you can totally throw those in. It's completely up to you. I'm now
12:51
putting in chicken broth which for me is water and chicken bouillon. So there's my water
13:08
Here's my chicken bouillon
13:20
To this I am going to add a heaping teaspoon of garlic powder, a heaping teaspoon of onion
13:27
powder, a half a teaspoon of paprika, some pepper, probably a quarter teaspoon-ish
13:36
and then I am gonna add a teaspoon of kosher salt
13:51
This is getting a brick of cream cheese. You can put in here any fresh herbs you like
13:56
Fresh oregano, fresh dill would be really good. I am, however, going to put a tablespoon of butter in here as well
14:09
I'm going to put this on high for four hours right after I plug it in
14:15
Okay, high for four hours. I'm going to go get my brick of cream cheese, though, and I'm going to cut it up and toss it in
14:22
Okay, I have one brick of cream cheese. Now, you can put any seasonings in here that you like
14:28
Herbes de Provence would be really good in here, but I don't think my husband will eat it if I put that in here
14:33
So, I am not going to. it's something that I like, but you know
14:38
that's a strong flavor, so 4 hours, we're going to add a little heavy cream
14:44
FYI, this is a really old recipe I haven't made it in a long time, but it's so good
14:50
this is excellent in the summertime too when it's too hot to cook, but you know what
14:56
It's a great use of zucchini Okay, this has been going for
15:01
about 3 and a half hours cream cheese is melting in but I'm going to add a little bit of heavy cream in as well
15:11
and I'm going to give it a taste to make sure there's enough seasoning in here
15:21
because it may need more salt that is perfect that is so good
15:28
it is ready to go Yum
15:39
I'm just going to let this go for another 30 minutes While I make sandwiches
15:46
And we're going to have soup and sandwiches for dinner Alright I am going to
15:52
Put this in a bowl Robert isn't quite home yet So hopefully I'll remember to
15:58
Have him give you a taste test when he gets home You can put a little cheese in this if you like, but look how delicious that is
16:06
Oh my gosh. I say it needs no cheese, but... Okay, I'm going to taste some of the mushroom and squash
16:18
Oh, yum. Two of my favorite things right here. This soup is perfect for me
16:25
Who needs growing old mushroom soup? Mushroom and zucchini bisque all the way
16:29
You've got to try this. A little parm on top. Okay, Robert is home
16:36
and he's going to give you his review. Okay, now you are
16:40
Okay, now I'm into video. Wow, look at this soup. Wow. It's hot
17:00
This is so ever good. I wish that zucchini and mushroom would fit in the straw because I'd be like this is good
17:09
all right everybody not even no lies no lies you've got to try this one zucchini has got big
17:16
big pieces to it so I'm gonna be working on this I don't want to do that I left them a little bit
17:21
bigger in half moons there we go we got a little bit of onion zucchini and a lot of broth and I'm
17:26
I'm dancing here because my fingers are on fire. Delicious, I'm gonna go ahead and take this over here
17:39
and eat my sandwich with it. Thank you people. Once again, thank you for watching
