Introduction

Ingredients
1 cup raw honey (preferably local)
6–8 sprigs fresh thyme (or 2 tbsp dried thyme)
Preparation
Prepare the Thyme:
Gently wash and pat dry the fresh thyme sprigs. If using dried thyme, ensure it’s of good quality with a strong aroma.
Heat the Honey (Optional):
For a quicker infusion, warm the honey slightly. Pour the honey into a clean, heat-safe jar and place it in a pot with warm water (do not boil). Heat gently for 5–10 minutes until the honey is slightly runny, making it easier for the thyme to release its flavors.
Infusing the Honey:
Place the thyme sprigs in the jar with the honey. Use a clean spoon or stirrer to gently push the thyme under the surface of the honey to fully submerge.
