Ingredients:
🌾 1 cup all-purpose flour (or whole wheat flour)
💧 1/2 cup filtered water (at room temperature)
Instructions:
1. In a clean glass or plastic container, combine the all-purpose flour and filtered water. Stir well until no dry flour remains and the mixture resembles thick pancake batter.
2. Cover the container loosely with a clean kitchen towel or plastic wrap, allowing for airflow while preventing any debris from entering.
3. Place the container in a warm spot in your kitchen, ideally around 70-75°F (21-24°C), away from drafts or direct sunlight.
4. Let the mixture sit at room temperature for 24 hours, undisturbed.
5. After 24 hours, you may notice some bubbles forming on the surface of the mixture. This indicates that wild yeast and beneficial bacteria are starting to colonize the mixture.
6. Discard half of the starter mixture and feed it by adding another 1/2 cup of all-purpose flour and 1/4 cup of filtered water. Stir well to combine.
7. Cover the container again and let the starter sit at room temperature for another 24 hours.
8. Repeat the discarding and feeding process every 24 hours, discarding half of the starter mixture and feeding it with equal parts flour and water, until the starter is bubbly, active, and has a slightly sour aroma. This process typically takes 5-7 days, but it may vary depending on environmental factors.
9. Once your sourdough starter is active and ready to use, you can use it to bake delicious sourdough bread, pancakes, waffles, and more!
10. Remember to maintain your sourdough starter by feeding it regularly, either at room temperature or in the refrigerator, depending on your baking schedule.
