Ingredients:
- 1 whole beef brisket (10-12 pounds) 🥩
- 1/4 cup of your favorite BBQ rub 🧂
- Wood chips or chunks (hickory, oak, or mesquite) 🌳
- BBQ sauce for serving 🍖
- Aluminum foil 🍃
Instructions:
1. Prepare your smoker according to manufacturer's instructions and preheat it to 225°F (107°C). Soak the wood chips or chunks in water for at least 30 minutes.
2. Trim any excess fat from the brisket, leaving about 1/4 inch of fat on the surface.
3. Season the brisket generously with the BBQ rub, making sure to coat all sides evenly.
4. Once the smoker is preheated, place the brisket fat-side up directly on the grate.
5. Add the soaked wood chips or chunks to the smoker box or directly onto the coals to create smoke.
6. Close the lid and let the brisket smoke for 1 hour per pound, or until the internal temperature reaches 195-205°F (91-96°C).
7. After the brisket has smoked for several hours, check it periodically and spritz it with apple juice or water to keep it moist.
