Seafood Salad
Ingredients:
1 pound mixed seafood (shrimp, scallops, calamari, or any combination), cooked and cooled
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 red onion, thinly sliced
1/4 cup Kalamata olives, pitted and sliced
1/4 cup fresh parsley, chopped
For the Dressing:
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 clove garlic, minced
1 teaspoon honey or maple syrup
Salt and pepper, to taste
