Scallion Pancakes Recipe
Scallion pancakes, or cong you bing, are a savory, flaky treat with a rich, aromatic flavor from fresh scallions. Originating from Chinese cuisine, these pancakes are perfect for breakfast, a snack, or as an appetizer. Their crispy exterior and soft, layered interior make them a favorite among many.
Ingredients:
2 cups all-purpose flour
3/4 cup boiling water
1/2 cup chopped fresh scallions
1/4 cup vegetable oil
1/2 tsp salt
Preparation:
Make the Dough: In a large bowl, add the flour and salt. Gradually pour the boiling water into the flour while stirring with a wooden spoon or chopsticks. Mix until the dough begins to come together. Let it cool slightly, then knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
Prepare the Filling: While the dough rests, chop the scallions finely. Set them aside.
Roll Out the Dough: On a lightly floured surface, divide the dough into 4 equal portions. Roll each portion into a thin circle, about 8 inches in diameter.
