Radish Salad
Ingredients:
2 cups radishes, thinly sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice (or vinegar of your choice)
Salt and pepper, to taste
Optional: Crumbled feta cheese or goat cheese for topping
Instructions:
Prepare Radishes: Rinse the radishes thoroughly under cold water. Trim off the tops and ends, then thinly slice them using a sharp knife or mandoline slicer.
Combine Ingredients: In a mixing bowl, combine the sliced radishes, red onion slices, and chopped parsley.
Dress the Salad: Drizzle olive oil and lemon juice (or vinegar) over the radish mixture. Season with salt and pepper to taste.
