Quick Pickled Red Onions These quick pickled red onions are tangy, slightly sweet, and perfect for topping tacos, salads, sandwiches, and more. Ingredients: 1 large red onion, thinly sliced 1 cup apple cider vinegar (or white vinegar) 1 cup water 1 tablespoon sugar 1 ½ teaspoons salt Optional flavorings: 1 teaspoon black peppercorns 1 teaspoon mustard seeds 1-2 cloves garlic, peeled and smashed A few sprigs of fresh herbs (such as thyme or dill) Instructions: Prepare the Onions: Peel and thinly slice the red onion into rings or half-moons. A mandoline slicer can be handy for this to get even slices.
