Protein Pancakes
Ingredients:
1 cup rolled oats (quick oats work too)
1 ripe banana
2 eggs
1/2 cup plain Greek yogurt
1/2 teaspoon vanilla extract
1/2 teaspoon baking powder
Pinch of salt
Optional: 1 scoop protein powder (vanilla or flavor of your choice)
Instructions:
Blend Ingredients: In a blender or food processor, combine rolled oats, banana, eggs, Greek yogurt, vanilla extract, baking powder, and salt. If using protein powder, add it to the blender as well. Blend until smooth and well combined. The batter should be thick but pourable. If too thick, you can thin it out with a little milk or water.
Heat Griddle or Pan: Heat a non-stick griddle or large skillet over medium heat. Lightly grease the surface with cooking spray or a small amount of butter.
Cook Pancakes: Pour about 1/4 cup of batter onto the heated griddle for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface of the pancake and the edges start to set. Flip carefully and cook for another 1-2 minutes, or until cooked through and golden brown on both sides.
