Potato Pancakes (Latkes)
Ingredients:
4 medium russet potatoes (about 2 pounds), peeled
1 small onion, finely grated or minced
2 large eggs, beaten
3 tablespoons all-purpose flour or matzo meal (for Passover)
1 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Vegetable oil, for frying
Instructions:
Grate the Potatoes: Using a box grater or food processor with a grating attachment, grate the peeled potatoes. Place the grated potatoes in a colander set over a bowl and squeeze out as much liquid as possible. Let the potato liquid sit for a few minutes to allow the starch to settle at the bottom of the bowl. Carefully pour off the liquid, leaving the starch in the bowl.
Combine Ingredients: In a large mixing bowl, combine the grated potatoes, grated onion, beaten eggs, flour or matzo meal, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat until hot but not smoking. You can test the oil temperature by dropping a small bit of the potato mixture into the pan; it should sizzle immediately.
