Pickled Red Onions
Ingredients:
1 large red onion, thinly sliced
3/4 cup apple cider vinegar or white vinegar
1/2 cup water
2 tablespoons granulated sugar
1 1/2 teaspoons salt
Optional: 1 teaspoon whole peppercorns, 1-2 bay leaves, or other spices for flavor (optional)
Instructions:
Prepare the Onions: Peel the red onion and thinly slice it into rings or half-moons. Place the sliced onions in a clean glass jar or container that has a lid.
Make the Pickling Liquid: In a small saucepan, combine the apple cider vinegar (or white vinegar), water, granulated sugar, salt, and any optional spices you're using (like peppercorns or bay leaves). Bring the mixture to a boil over medium-high heat, stirring occasionally until the sugar and salt are completely dissolved.
Pour Over Onions: Once the pickling liquid comes to a boil and the sugar and salt are dissolved, carefully pour the hot liquid over the sliced onions in the jar. Make sure the onions are completely submerged in the liquid.
Cool and Seal: Let the pickled onions cool to room temperature. Once cooled, seal the jar or container with a lid and refrigerate for at least 1 hour before using. The flavors will develop further as they marinate in the refrigerator.
