Ingredients:
8 ounces wide rice noodles
2 tablespoons vegetable oil
1 cup thinly sliced chicken, beef, pork, shrimp, or tofu (optional)
3 cloves garlic, minced
1 cup broccoli florets
1 cup sliced carrots
1 cup sliced bell peppers (any color)
2 eggs, beaten
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon fish sauce
1 tablespoon brown sugar (or palm sugar)
1/2 teaspoon white pepper
Green onions, chopped for garnish
Crushed peanuts (optional, for garnish)
