Molcajete Recipe Introduction: A molcajete is a traditional Mexican stone mortar and pestle used for grinding spices, making salsas, and preparing sauces. This versatile kitchen tool is not only functional but also adds a rustic, authentic touch to your dishes. Using a molcajete for recipes like salsas or guacamole allows the flavors to meld beautifully, thanks to the stone's texture and natural heat retention. Ingredients: 2 large tomatoes 1 small onion 2 cloves garlic 1 jalapeño (or to taste) 1/4 cup fresh cilantro 1 lime (juiced) Salt to taste Preparation: Roast the Vegetables: Place the tomatoes, onion (whole), and jalapeño on a hot, dry skillet or directly over a gas flame. Roast until the skins are blistered and charred, turning occasionally for even roasting. This should take about 5-7 minutes for each vegetable. Once roasted, allow them to cool slightly. Peel and Chop: Remove the skins from the tomatoes. Peel the onion and cut it into quarters. Remove the stem and seeds from the jalapeño. Roughly chop all roasted vegetables. Grind in Molcajete: Place the garlic cloves in the molcajete and grind until smooth. Add the roasted vegetables and continue grinding until you achieve a chunky paste.
