Mexican street corn, also known as elote, is a popular and flavorful dish that combines the sweetness of corn with tangy and spicy flavors. Here's a simple recipe to make Mexican street corn at home:
Ingredients:
- 4 ears of fresh corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup crumbled cotija cheese or feta cheese
- 1 teaspoon chili powder (or more to taste)
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions:
1. Preheat your grill to medium-high heat. Alternatively, you can use a grill pan or broiler.
2. Place the husked corn directly on the grill grates and cook, turning occasionally, until the corn is charred in spots and cooked through, about 8-10 minutes.
3. While the corn is grilling, prepare the sauce by combining the mayonnaise and sour cream (or Mexican crema) in a small bowl. Stir until smooth and well combined.
