Low FODMAP Gazpacho
Introduction

Ingredients
6 large ripe tomatoes, peeled and chopped
1 cucumber, peeled, seeded, and chopped
1 red bell pepper, chopped
1 small green bell pepper, chopped
1 small carrot, chopped
2 green onions (green tops only), chopped
2 garlic-infused olive oil (use a low FODMAP-friendly brand)
3 cups low FODMAP vegetable or chicken broth
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
Salt and freshly ground black pepper to taste
Fresh basil or parsley for garnish (optional)
