Ingredients:
1 gallon fresh goat milk
1/4 teaspoon mesophilic starter culture (optional for added tang)
1/4 rennet tablet (or 1/4 teaspoon liquid rennet)
1 teaspoon non-iodized salt (for seasoning)
Instructions:
Prepare the Goat Milk:
Pour the fresh goat milk into a large stainless steel pot. If you have a mesophilic starter culture, sprinkle it over the milk and let it sit for about 5 minutes to rehydrate.
