Ingredients:
🌾 1 cup long-grain white rice
🌰 1/2 cup blanched almonds
🥛 4 cups water (plus more for soaking)
🥄 1 cinnamon stick
🥄 1/2 cup granulated sugar (or to taste)
🥤 Ice cubes, for serving
🌿 Ground cinnamon, for garnish (optional)
Instructions:
1. Place the white rice and blanched almonds in a large bowl and cover them with water. Let them soak together for at least 6 hours or overnight.
2. After soaking, drain the rice and almonds and discard the soaking water.
3. In a blender, combine the soaked rice and almonds with 4 cups of fresh water and the cinnamon stick.
4. Blend on high speed for 2-3 minutes, or until the mixture is smooth and creamy.
5. Place a fine-mesh strainer or cheesecloth over a large bowl or pitcher and pour the blended mixture through it, straining out any solids.
