Homemade Chicken Stock
Ingredients:
1 whole chicken (about 4-5 pounds) or 2-3 pounds of chicken bones (backs, necks, wings)
2 large onions, quartered (leave the skins on for color)
3 large carrots, cut into chunks
3 celery stalks, cut into chunks
1 head of garlic, halved horizontally (leave the skin on)
2-3 bay leaves
1 tablespoon whole black peppercorns
A handful of fresh parsley stems (optional)
8-10 cups cold water
Salt to taste
Instructions:
Prepare Ingredients: Rinse the chicken or chicken bones under cold water. If using a whole chicken, remove any giblets from the cavity.
Combine Ingredients: In a large stockpot, combine the chicken or chicken bones, onions, carrots, celery, garlic, bay leaves, and peppercorns. Add the parsley stems if using.
