Introduction

Ingredients
8-10 medium tomatillos, husked and rinsed
1 medium white onion, peeled and quartered
2 cloves garlic, peeled
2-3 jalapeño peppers, stems removed (adjust based on heat preference)
1/4 cup fresh cilantro leaves
1 tablespoon lime juice (about 1 lime)
1 teaspoon salt
1/2 teaspoon ground cumin (optional)
1 tablespoon vegetable oil
Instructions
Prepare the Ingredients: Husk the tomatillos and rinse them under cold water to remove the sticky residue. Peel the garlic and cut the onion into quarters. Remove the stems from the jalapeño peppers.
Roast the Vegetables: Heat the vegetable oil in a large skillet over medium-high heat. Add the tomatillos, onion, garlic, and jalapeños. Cook, turning occasionally, until the tomatillos are charred and soft, and the onions and jalapeños are lightly browned, about 8-10 minutes. You can also roast them under a broiler if preferred.
Blend the Salsa: Once roasted, transfer the tomatillos, onion, garlic, and jalapeños to a blender or food processor. Add the cilantro leaves, lime juice, salt, and ground cumin (if using). Blend until smooth. Taste and adjust the seasoning if necessary.
