Fårikål (Norwegian Lamb Stew)
Introduction:
Fårikål, Norway's beloved national dish, is a hearty lamb stew that celebrates simplicity. Traditionally enjoyed in the fall, this rustic dish combines tender lamb, cabbage, and black peppercorns, slow-cooked to perfection. The name "Fårikål" literally means "lamb in cabbage," and the dish is a testament to Norwegian culinary tradition, where minimal ingredients create maximum flavor. Often served with boiled potatoes, Fårikål is comfort food at its finest, perfect for chilly days when you crave something warm and satisfying.
Ingredients:
1.5 kg (3.3 lbs) lamb shoulder or leg, cut into large pieces
1 large head of cabbage, cut into wedges
1 tbsp whole black peppercorns
2 tsp salt
3-4 cups water
8-10 small potatoes, for serving (optional)
Steps:
Prepare the Ingredients: Rinse the lamb pieces under cold water and pat dry. Cut the cabbage into large wedges.
Layer the Pot: In a large pot, start with a layer of lamb pieces, then add a layer of cabbage. Sprinkle some salt and peppercorns over the layers. Repeat the layers, finishing with a layer of cabbage on top.
