Ingredients:
1/2 cup soy sauce
1/2 cup mirin (Japanese sweet rice wine)
1/4 cup granulated sugar
1 tablespoon sake (optional, for added depth)
Instructions:
Combine Ingredients: In a small saucepan, combine the soy sauce, mirin, and granulated sugar. If using, add the sake. Stir the mixture well to ensure the sugar begins to dissolve.
Heat the Sauce: Place the saucepan over medium heat. Stir continuously to prevent the sugar from sticking to the bottom and burning. Bring the mixture to a gentle boil.
Simmer: Once boiling, reduce the heat to low and let the sauce simmer. Continue stirring occasionally, allowing the sauce to reduce and thicken. This should take about 10-15 minutes. The sauce is ready when it coats the back of a spoon.
