Ingredients π
1 lb (about 450g) fresh spinach leaves, washed and stems removed π
2 tablespoons unsalted butter π§
2 cloves garlic, minced π§
1/4 cup finely chopped onion π§
1/4 cup all-purpose flour πΎ
1 cup milk or half-and-half π₯
1/2 cup grated Parmesan cheese π§
Salt π§ and freshly ground black pepper π, to taste

Cook the spinach: In a large pot or skillet, wilt the spinach over medium heat. Add the spinach leaves a handful at a time, stirring and allowing them to wilt down before adding more. Once all the spinach is wilted, remove it from the heat and set aside.
Prepare the sauce: In the same pot or skillet, melt the butter over medium heat. Add the minced garlic and finely chopped onion. Cook for 2-3 minutes, or until the onion is translucent and the garlic is fragrant.
