3 cups rye flour
2 cups bread flour
2 1/4 tsp active dry yeast
2 tbsp molasses
2 tbsp caraway seeds (optional)
2 tsp salt
1 1/2 cups warm water (110°F/45°C)
1 tbsp olive oil (plus extra for greasing)
Instructions:
Activate the yeast: In a small bowl, mix the warm water and molasses. Sprinkle the yeast on top and let it sit for about 5 minutes, until it becomes frothy.
Mix dry ingredients: In a large mixing bowl, combine the rye flour, bread flour, salt, and caraway seeds.
Combine ingredients: Add the yeast mixture to the dry ingredients. Mix until a shaggy dough forms. Add the olive oil and knead for about 10 minutes, until the dough is smooth and elastic.
First rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1.5 hours, or until doubled in size.
