Caldo de Res (Mexican Beef Soup)
Ingredients:
2 lbs beef shank or beef chuck roast, cut into chunks
1 onion, peeled and halved
4 cloves garlic, peeled
2 bay leaves
1 teaspoon whole black peppercorns
Salt, to taste
8 cups water (or beef broth for richer flavor)
2 ears of corn, husked and cut into thirds
2 large carrots, peeled and cut into chunks
2 large potatoes, peeled and cut into chunks
2 chayotes, peeled and cut into chunks (optional)
2 zucchinis, cut into chunks
1/2 head of cabbage, cut into wedges
Fresh cilantro, chopped, for garnish
Lime wedges, for serving
Sliced jalapeños or hot sauce, for serving (optional)
