Blackened Tilapia with Zucchini Noodles Ingredients: 2 tilapia fillets 2 medium zucchinis, spiralized into noodles 2 tablespoons olive oil 1 tablespoon blackening seasoning (a blend of paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper) 1 lemon, sliced Salt and pepper to taste Fresh parsley for garnish (optional) Instructions: Prepare the Zucchini Noodles: Spiralize the zucchinis into noodles using a spiralizer or cut them into thin strips with a julienne peeler. Set aside. Season the Tilapia: Pat the tilapia fillets dry with paper towels. Rub each fillet with olive oil, then coat generously with blackening seasoning. Ensure both sides are evenly covered. Cook the Tilapia: Heat a large skillet over medium-high heat. Add a tablespoon of olive oil. Once hot, add the seasoned tilapia fillets. Cook for about 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. The seasoning should form a dark crust. Sauté the Zucchini Noodles: In the same skillet, add another tablespoon of olive oil if needed. Toss in the zucchini noodles and sauté for 2-3 minutes until just tender but still slightly crunchy. Season with salt and pepper to taste.
