Introduction:
Biko is a traditional Filipino rice cake made from glutinous rice, coconut milk, and brown sugar. It's a popular dessert or snack enjoyed during special occasions and festivals. The combination of sweet, creamy, and slightly chewy textures makes it a favorite treat. This simplified version keeps ingredients to a minimum while still delivering authentic flavor.
Ingredients:
1 cup glutinous rice
2 cups coconut milk
1 cup brown sugar
1/4 teaspoon salt
1 tablespoon cooking oil (for greasing)
Instructions:
Prepare the Rice:
Rinse the glutinous rice under cold water until the water runs clear. Drain well.
In a medium-sized pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat.
