Bellini Cocktail Ingredients: 2 ripe peaches, peeled, pitted, and chopped (or 2/3 cup peach purée) 1 tablespoon lemon juice 1 teaspoon sugar (optional, depending on sweetness of peaches) Chilled Prosecco or sparkling wine Instructions: Prepare the Peach Purée: If using fresh peaches, peel, pit, and chop them. Place the chopped peaches in a blender or food processor along with lemon juice and sugar (if using). Blend until smooth to make peach purée. Assemble the Bellini: Spoon 1-2 tablespoons of peach purée into a chilled champagne flute or glass. Slowly pour chilled Prosecco or sparkling wine into the glass, filling it almost to the top. Gently stir to mix the peach purée with the sparkling wine.
