Beef Wellington Recipe
Ingredients:
1 1/2 to 2 pounds (680 to 900g) beef tenderloin, center-cut, trimmed
Salt and freshly ground black pepper
2 tablespoons olive oil
1 tablespoon Dijon mustard
8 ounces (225g) cremini mushrooms, finely chopped
2 shallots, finely chopped
2 cloves garlic, minced
2 tablespoons unsalted butter
1/4 cup dry white wine or beef broth
1 tablespoon chopped fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
8-10 slices prosciutto or Parma ham
1 sheet (about 9x9 inches or 23x23 cm) puff pastry, thawed if frozen
1 egg, beaten (for egg wash)
