Ingredients:
🥩 2 racks of baby back ribs
🧂 Salt and black pepper, to taste
🍖 Your favorite BBQ rub or seasoning blend
🍯 1 cup BBQ sauce (store-bought or homemade)
🌽 Corn on the cob, for serving
🥗 Coleslaw, for serving
Instructions:
1️⃣ Preheat your grill to medium-high heat, aiming for a temperature of around 300°F (150°C). If using a charcoal grill, set up a two-zone fire with hot coals on one side and no coals on the other side.
2️⃣ Season the racks of ribs generously with salt, black pepper, and your favorite BBQ rub or seasoning blend, patting the seasonings onto the meat to ensure they adhere.
3️⃣ Place the seasoned ribs on the grill, bone side down, over indirect heat (away from the direct flames). Close the lid and let the ribs cook for 2-2.5 hours, or until they are tender and the meat starts to pull away from the bones.
4️⃣ During the last 30 minutes of cooking, baste the ribs with BBQ sauce, brushing it on evenly and allowing it to caramelize slightly on the surface of the meat.
5️⃣ While the ribs are cooking, grill the corn on the cob over direct heat, turning occasionally, until charred and tender, about 10-15 minutes.
6️⃣ Remove the cooked ribs from the grill and let them rest for a few minutes before slicing them into individual portions.
