Zucchini Noodles (Zoodles) with Pesto πΏ
Ingredients:
4 medium zucchini
1 cup fresh basil leaves, packed
1/4 cup pine nuts or walnuts, toasted
2 cloves garlic, peeled
1/4 cup grated vegan Parmesan cheese (optional)
1/4 cup extra virgin olive oil
Juice of 1/2 lemon
Salt and pepper, to taste
Cherry tomatoes, halved (optional, for garnish)
Vegan Parmesan cheese, for garnish (optional)
Instructions:
Prepare Zucchini Noodles:
Using a spiralizer, julienne peeler, or vegetable peeler, create zucchini noodles (zoodles) from the zucchini. Place the noodles in a colander set over a bowl and sprinkle with salt. Let them sit for about 10-15 minutes to release excess moisture, then pat dry with paper towels.
