Traditional Coq au Vin Recipe
Ingredients:
1 whole chicken (about 3-4 lbs), cut into serving pieces
1 bottle of red wine (Burgundy is traditional)
2 cups chicken stock
4 oz bacon, diced
2 tbsp olive oil
1 large onion, chopped
2 carrots, peeled and sliced
3 cloves garlic, minced
2 tbsp all-purpose flour
2 tbsp tomato paste
1 bouquet garni (thyme, bay leaf, parsley, tied together)
8 oz mushrooms, quartered
20 small pearl onions, peeled
Salt and pepper to taste
Fresh parsley, chopped, for garnish
