Ingredients π±π₯
1 whole beef brisket, about 10-12 pounds, preferably with a fat cap π₯©
Kosher salt π§
Coarsely ground black pepper πΆοΈ
Your favorite BBQ rub (optional) π
Wood chips or chunks (hickory, oak, or mesquite) for smoking π³

Prepare the Brisket π₯©πͺ
Trim any excess fat from the brisket, leaving about 1/4 inch of fat on one side (the fat cap). This helps keep the meat moist during smoking.
Score the fat cap in a crosshatch pattern to help the rub penetrate.
Season the Brisket π§πΆοΈ
Liberally season the brisket on all sides with kosher salt and coarsely ground black pepper. If desired, apply your favorite BBQ rub as well, ensuring the meat is well coated. Let it sit at room temperature for about 30 minutes while you prepare the smoker.
Prepare the Smoker π₯π³
Preheat your smoker to 225-250Β°F (107-121Β°C). Add wood chips or chunks to the smoker box or directly to the coals for smoke flavor.
