Pot Roast Pork
Ingredients:
3-4 lbs pork shoulder or pork butt
2 tbsp olive oil
1 large onion, sliced
3 cloves garlic, minced
2 large carrots, cut into chunks
2 celery stalks, cut into chunks
1 cup chicken or vegetable broth
1 cup dry white wine (or additional broth)
2 tbsp tomato paste
2 tbsp soy sauce or Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Salt and pepper to taste
Instructions:
Season the pork: Pat the pork dry with paper towels. Generously season it with salt and pepper on all sides.
