Ingredients:
12 oz (340g) pasta (rigatoni, spaghetti, or any pasta of your choice)
2 medium eggplants, cut into 1-inch cubes
2 tbsp olive oil
3 cloves garlic, minced
1 can (14 oz) crushed tomatoes
1 tbsp tomato paste
1 tsp dried oregano
1/2 tsp dried basil
Salt and pepper to taste
1/4 cup fresh basil, chopped
1/4 cup vegan ricotta or regular ricotta salata cheese, crumbled
Red pepper flakes (optional, for heat)
Instructions:
Prepare the eggplant: Preheat your oven to 400°F (200°C). Spread the cubed eggplant on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper. Roast for 20-25 minutes, tossing halfway through, until the eggplant is tender and lightly browned.
