Leftover Salmon Bowl
Ingredients:
1 cup cooked quinoa or brown rice (you can also use other grains like farro or couscous)
1 cup leftover cooked salmon, flaked into pieces
1/2 avocado, sliced
1/2 cup cucumber, thinly sliced
1/4 cup shredded carrots
1/4 cup red cabbage, thinly sliced (optional)
2 tbsp soy sauce or tamari (for a gluten-free version)
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp honey or maple syrup
1/2 tsp chili flakes (optional, for heat)
1 tbsp toasted sesame seeds (optional)
Fresh cilantro or parsley for garnish
Instructions:
Prepare the base: Cook your quinoa or rice according to package instructions. Once cooked, fluff with a fork and divide the grains into bowls.
Assemble the bowl: Flake the leftover salmon into bite-sized pieces and place it on top of the grains. Arrange the avocado slices, cucumber, shredded carrots, and red cabbage (if using) around the salmon.
