Herb-Crusted Rack of Lamb
Ingredients:
1 rack of lamb (8 ribs), frenched
2 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1/4 cup Dijon mustard
1 cup breadcrumbs (Panko or regular)
Salt and freshly ground black pepper
Lemon wedges (for serving, optional)
Instructions:
Prepare the lamb:
Preheat your oven to 400°F (200°C).
Pat the rack of lamb dry with paper towels. Trim excess fat and season generously with salt and pepper on all sides.
Sear the lamb:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
