Classic Plain Dosa
Ingredients:
2 cups rice (regular or parboiled)
1/2 cup urad dal (split black gram)
1/4 tsp fenugreek seeds
Salt to taste
Water as needed
Oil or ghee for cooking
Instructions:
Soak and grind: Rinse the rice, urad dal, and fenugreek seeds separately. Soak them for 4-6 hours. Grind them together with water into a smooth batter. The consistency should be slightly thick but pourable.
Ferment: Cover the batter and leave it in a warm place to ferment for 8-12 hours or overnight. Once fermented, add salt and mix gently.
Cook the dosa: Heat a non-stick or cast-iron skillet. Pour a ladleful of batter onto the skillet and spread it in a circular motion to form a thin crepe. Drizzle oil or ghee around the edges. Cook until golden brown and crisp.
Serve: Serve hot with coconut chutney and sambar.

2 medium potatoes, boiled and mashed
1 onion, thinly sliced
1 green chili, chopped
1/2 tsp mustard seeds
6-8 curry leaves
