Avocado and Bacon Stuffed Bell Peppers 🥑🥓
Ingredients:
4 large bell peppers (any color), halved lengthwise and seeds removed
2 ripe avocados, peeled, pitted, and diced
6 slices bacon, cooked until crispy and crumbled
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
Juice of 1 lime
1/4 cup fresh cilantro, chopped
Salt and pepper, to taste
Optional: shredded cheese (cheddar or mozzarella), for topping
