This comfort food is made with boiled potatoes mashed with mustard oil, green chilies, onions, and fresh coriander, creating a smoky, spicy flavor that’s both unique and irresistible. Alu Bhorta is typically served as part of a larger meal with rice and lentils, providing a perfect blend of heat, earthiness, and tang that elevates everyday dining to something special. Ingredients: 4 medium potatoes, peeled and cubed 1 small onion, finely chopped 2 green chilies, finely chopped (adjust to taste) 2 tbsp mustard oil (or vegetable oil if unavailable) 2 cloves garlic, minced 1 tbsp fresh coriander leaves, chopped Salt, to taste Instructions: Boil the Potatoes: Place the peeled, cubed potatoes in a pot with water and boil until they’re tender. This usually takes around 10-15 minutes. Drain and set aside. Prepare the Aromatics: In a small pan, heat the mustard oil over medium heat until it begins to smoke slightly. Add minced garlic and sauté until golden brown and aromatic. Turn off the heat and let the oil cool slightly. Mash the Potatoes: In a mixing bowl, add the boiled potatoes and mash them until smooth. Pour in the fragrant mustard oil along with the garlic, finely chopped onion, and green chilies. Mix everything together, mashing and stirring until well combined. Season and Garnish: Add salt to taste and sprinkle in the fresh coriander leaves. Mix everything once more to incorporate all flavors evenly. Serve: Alu Bhorta is traditionally served at room temperature alongside steamed rice, dal (lentils), and other side dishes.
