With ackee, a fruit that resembles scrambled eggs when cooked, and saltfish (salted cod), this dish has a rich, savory flavor, balanced by onions, tomatoes, and spices. This hearty meal is typically enjoyed for breakfast but can be served at any time of day.
Ingredients:
1 can ackee (about 20 oz) or fresh ackee if available
1/2 lb saltfish (salted cod)
1 medium onion, sliced
1 bell pepper, chopped (red or green)
2 tomatoes, chopped
2 scallions, chopped
1 Scotch bonnet pepper, seeded and finely chopped (optional, for heat)
1/2 tsp black pepper
1/4 tsp thyme
2 tbsp vegetable or coconut oil
Optional: fresh parsley, to garnish
Instructions:
Prepare the Saltfish: Rinse the saltfish under running water to remove excess salt. Place it in a pot of water, bring to a boil, and let it simmer for about 20 minutes. Drain, rinse, and flake into bite-sized pieces. Set aside.
