1 1/2 cups persimmon pulp (from about 3-4 ripe persimmons)
- 2 teaspoons baking soda
- 3 cups all-purpose flour
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2/3 cup water
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (such as walnuts or pecans, optional)
- 1 cup raisins or dried cranberries (optional)
