0:00
hey welcome back to the freeze Drive
0:01
business Channel my name is David I'm an
0:03
owner of a freeze-dried business in
0:05
Idaho if you're looking at starting a
0:07
freeze-dry business or you're currently
0:08
operating one and you're just wanting to
0:10
know more and more about how you can
0:11
grow your business this channel is for
0:13
you today we're going to be doing bit oh
0:16
honey bit of Honeys are actually my top
0:19
20 selling items to do as a freeze-dried
0:21
business if you want to check out that
0:22
video it's in the description below I'm
0:24
going to be showing you the unwrapping
0:26
of the candies The Cutting as well as
0:28
the arrangement on the trays and then
0:30
also the freeze dryer settings that you
0:32
need for this bit of honey so let's get
0:33
started with this video
0:37
all right so let's go ahead and get the
0:39
freeze dryer set up before we start
0:40
arranging the candy I'm going to show
0:42
you how to put it in candy mode right
0:44
here so if you have version 5.1 or
0:47
higher for your Harvest Right freeze
0:48
dryer it's really simple to put into
0:50
candy mode you press customize and then
0:52
you're really just going to change the
0:54
dry temperature to above 130 degrees so
0:57
let's go ahead and change it to 140
0:59
that's what I like for the bit of Honeys
1:01
we've got it on dry mode is fast and we
1:04
don't need any extra freeze trying but
1:06
that's okay to leave an initial freeze
1:08
and then extra dry time is not even
1:10
going to be applied so we save
1:13
and then we're going to start
1:16
so now the freeze dryer is started we're
1:18
just going to shut the door and then get
1:19
started on prepping the candy
1:24
okay so now we're ready to cut and I
1:25
just want to show you the tools that I'm
1:27
using one is a just a really good knife
1:29
that has a sharp blade I use an old
1:32
antique knife sharpener but you can find
1:34
one on Amazon I've got a link in the
1:36
description below so I'm just going to
1:39
sharpen up the blade a little bit and
1:42
really all we're going to do is I'm
1:43
going to unwrap this the bit of honey
1:45
and then I'm going to cut it into three
1:48
different sizes so we can kind of see
1:50
what the variable different sizes are so
1:53
I'm going to do some in whole do in half
1:55
and then also do in thirds you can cut
1:59
the bit of honey in half let's say and
2:02
then try to kind of squeeze it out of
2:03
the wrapper I did this similar to the
2:07
to the Taffy video but you know I know I
2:12
know you can do that but I found that
2:14
it's just easier to just
2:16
unwrap the bit of Honeys before you
2:20
start cutting so that's what we're gonna
2:22
do now people who like freeze-dried
2:26
like it because one it's a different
2:28
type of texture so it's fun usually the
2:31
flavor hits a little bit faster because
2:33
it's crunchy and people who can't do
2:36
chewy candies now they can I'm just
2:39
going to keep unwrapping probably I'd
2:45
individual pieces with candy there's
2:47
really no easy way to prep it you have
2:49
to unwrap it you have to cut it
2:52
that's what everybody is doing and some
2:55
of us it's kind of that mindless type of
2:59
work that sometimes we like you know you
3:01
can turn on a show in the background or
3:07
but you know it's just kind of fun to
3:08
kind of see see what it does and but it
3:11
is a lot of work so you got to figure in
3:13
those labor costs now you might be
3:15
asking yourself you know what do I price
3:17
a bit of Honeys at you know what is
3:20
what's the type of like weight how much
3:22
product you put in your bags well like
3:25
I've shown before I use a craft mylar
3:28
bag that's food safe but short term it's
3:31
about a five by eight bag and what I
3:35
usually do with candy is I fill it to as
3:38
much as I can without impacting the
3:41
candy so it's not crushed you know so I
3:44
put as much as it in there then I weigh
3:46
it and then I basically kind of have
3:51
um of the amount of freeze-dried product
3:53
that's in there then I put that weight
3:54
on the labels so I've already found that
3:57
through my bags also with pricing I
4:03
usually price this at between eight to
4:05
ten dollars usually this is a ten dollar
4:07
type of candy because I pay about 3.78
4:10
cents a pound for it and um it's just a
4:13
little bit more labor intensive to do
4:15
this okay so now that we've got these
4:18
all unwrapped we'll cut them into thirds
4:19
halves and leave a couple for holes all
4:22
right so now we're going to cut
4:27
and we're gonna cut in thirds know a
4:30
real quick way of doing this just find a
4:38
I don't know I'm just gonna ballpark it
4:42
in terms of the process of like you know
4:44
how means they're doing things you can
4:46
figure that out I wasn't going to do
4:47
that for this video in particular I was
4:49
just going to show you you know here's
4:51
the cutting here's the arrangement
4:52
here's the different sizes for uh
4:56
different ways you can different sizes
4:59
and just kind of show you a good a good
5:02
candy to do if you're just starting out
5:04
or maybe you've you've started a
5:06
freeze-dried business and you want to
5:08
try something different so we're going
5:09
to cut these into thirds
5:15
okay so let's set let's set that aside
5:20
so we don't get those mixed up
5:22
so these are our thirds
5:28
January is typically a slower month for
5:32
me because even though it's you know
5:35
you've got Valentine's Day coming up
5:37
there's just not a whole lot of
5:39
Valentine's Day specific
5:42
a little candy tart shape stuff like
5:45
that so Easter is actually a really big
5:48
holiday for freeze drying
5:51
just be careful with yourself I almost
5:54
cut myself there as you can see but
5:56
Easter is a really good holiday to do
5:58
freeze-dried candy for and Mother's Day
6:03
I've seen do well but it usually picks
6:06
up for me in the summer months when
6:08
people are more out and about there's a
6:10
little bit more spending money but
6:12
January through February is a little bit
6:15
okay so there we go so we've got our
6:19
whole pieces right here we've got thirds
6:21
and then we've got halves
6:26
all right so let's put these on the tray
6:28
so let's go ahead and do our whole
6:30
pieces and what I'd like to do is just
6:33
give enough space just to make sure if
6:35
they pop too too big or
6:38
whatever just you know for the full
6:40
sizes let's just do five across
6:44
lengthways and then for the halves let's
6:48
go ahead and do six across
6:53
and spacing is important if you care
6:58
you know having it look like a full
7:00
piece you know with you know if they
7:02
were really stuck together then they
7:04
might when it freeze dries and it starts
7:06
puffing up it might when you pull them
7:08
apart it might show a little bit more of
7:10
a Detachment type look
7:13
so that's why I like having
7:16
a little bit more space with six across
7:19
you could probably do seven
7:21
but I'm just gonna do six just for this
7:25
video okay so you see how
7:28
how close I'm getting here this is going
7:30
to be plenty of room to get the thirds
7:32
and even if it's not you know we can
7:34
obviously put more on another tray but
7:37
I'm just going to do one tray
7:42
slide that up a little bit more
7:55
you know like I said at the beginning of
7:58
the freeze dryer settings is at 140
8:01
degrees for about two hours that's it
8:04
so those are the third so we've got
8:06
thirds right here and then halves and
8:09
then we've got our holes up here so
8:10
that's that's that looks pretty good so
8:12
we've got some leftovers for the next
8:17
once you put the bit of Honeys in the
8:19
freeze dryer you're going to be prompted
8:20
to whether you want to warm the trays or
8:22
not I don't usually do that for the bit
8:24
of Honeys but for certain candies when
8:26
you want to change the texture some
8:28
candies do need to be warmed first and
8:30
then you start the drying process but
8:31
for a bit of Honeys you don't need to do
8:32
that just press Skip and then you only
8:35
need a freeze dry for about two to two
8:37
and a half hours so we'll do that on
8:39
this freeze dryer and then we'll see
8:40
what they look like after those couple
8:45
all right the bit of Honey is all done
8:46
let's go ahead and take a look to see
8:48
what they look like freeze-dried
8:50
alrighty so here's some perspective on
8:52
the different sizes we've got our full
8:55
we've got our half and our third so
8:58
really not much change with the half and
8:59
the thirds but definitely the hole so I
9:02
I would say you know to fit more product
9:05
in and to make it look like there's more
9:07
bite-sized pieces I'd probably go with
9:09
the thirds and the halves and then for
9:12
the holes you could definitely do that
9:13
if you want to throw a couple in there
9:16
that's what they look like so let's
9:17
let's kind of actually see what they
9:18
taste like bit of Honeys change their
9:20
texture they do become crunchy so this
9:22
is a full-size bit of honey that's
9:26
now hey I'm not the biggest fan of bit
9:27
of Honeys even before as a chewy candy
9:30
but they are pretty tasty and a lot of
9:33
my customers like them so I decided to
9:34
make a limited number of bags I do
9:37
believe that these are a top seller for
9:38
you to add to your product lineup well
9:40
that's a wrap on this video for freeze
9:42
drying bit of Honeys if you like the
