0:00
hey welcome to the freeze Drive business
0:01
Channel have you been an airhead when it
0:03
comes to freeze drying AirHeads well I
0:06
have two I'm gonna try the AirHeads for
0:08
the first time and so you're going to
0:09
see me set the freeze dryer to what I
0:11
think is going to work as well as
0:13
Arrangement on the tray I'm also going
0:15
to cut some of them and we're going to
0:16
see what AirHeads do in the freeze dryer
0:18
as well as how we can make it work let's
0:24
hey welcome to another video on the
0:26
freeze Drive business Channel my name is
0:27
David I run a freeze-dried business in
0:29
Idaho I've been running my business for
0:31
several years and I've learned a lot of
0:32
different things about freeze drying as
0:34
a business now a lot of things are
0:35
different for every different state that
0:37
you're a part of but there are a lot of
0:39
things that remain the same within a
0:40
freeze-dry business so a lot of my
0:42
videos are to share those generalities
0:43
and some of the specifics I can help you
0:46
if you comment in my videos or you send
0:48
me an email in my about section on my
0:50
YouTube channel now today we're going to
0:52
be doing AirHeads and I haven't done
0:54
them before but I wanted to try them and
0:56
I think they're really fun I don't like
0:57
adding a whole lot of new candies to my
0:59
product lineup within my business
1:01
because I've already got a lot of
1:03
candies and it's just a lot to store and
1:05
to do but I've been wanting to try this
1:07
because there's a lot of new ways to do
1:08
freeze drying candy that I've been
1:10
seeing where you're warming the trays
1:12
you're also going at a very high
1:13
temperature for longer periods of time
1:15
to make certain things work and I just
1:18
want to try something new so what you
1:19
can expect in this video is I'm going to
1:21
set up the freeze dryer settings you're
1:22
going to see that you're also going to
1:24
see me I arrange them on the trays I am
1:26
going to cut them because if I was to
1:29
sell the airhead I kind of like having
1:31
bite-sized pieces because when you put
1:33
them in the bag for sale they just look
1:35
like there's more in it and that's the
1:37
way we all are within as consumers is if
1:40
we see that there's more we might
1:42
actually buy more and that's just for my
1:44
style of bagging and my style of
1:45
marketing I just want to be able to have
1:47
more bite-sized pieces so before we get
1:49
started let's go ahead and set the
1:51
freeze dryer now hey I already did a
1:52
candy batch so what you can do on the
1:54
freeze dryers you can hit the button
1:56
that says start new Candy batch that's
1:58
what I'm going to do and that basically
2:00
starts a new Candy batch at the same
2:03
temperature that you had previously
2:04
which I did at 150 degrees for a
2:06
different type of candy which is the
2:08
Lemonheads go ahead and check out that
2:10
video I've got all the trays out we're
2:12
going to put the AirHeads on the trays
2:14
and then we're gonna put them in at 150
2:16
degrees now hey I know a lot of you
2:18
sometimes have the earlier version of
2:21
the Harvest Right software and you don't
2:23
have the option for can handy mode but
2:25
you do have the option within that same
2:27
old software to set the dry temperature
2:30
so before the machine starts you need to
2:33
go into the custom settings change the
2:35
temperature to about 140 maybe even 150
2:38
degrees and then start the machine now
2:41
to bypass all of the freezing cycle and
2:44
the vacuum pressure and all that type of
2:45
thing that you normally would do with a
2:48
full cycle with fruit other types of
2:50
foods is you're just going to start the
2:53
machine and then once it starts kicking
2:55
on freezing you're going to say cancel
2:57
and then it's going to bring you to the
2:59
screen that says hey do you want to add
3:02
more final dry or do you want to defrost
3:04
or not defrost what you're going to
3:05
choose is add more final dry time and
3:09
basically all you're going to do is kick
3:11
it into the final dry at that high
3:12
temperature that you already set so
3:14
that's for the people that have the
3:15
older software those will have the new
3:17
software you've got candy mode and
3:19
really all you're going to do is you're
3:20
going to press customize before the
3:22
machine starts you're going to change
3:24
that 10 to 150 140 degrees and you're
3:27
also going to change the dry time to
3:30
whatever you want I have it set at five
3:32
hours right now because I did the lemon
3:34
heads so I'm just going to keep it at
3:36
that and then I might change it to lower
3:38
or higher based on what the end result
3:40
is all right so we've got all the
3:42
different AirHeads I bought these in
3:44
bulk and it was about 2.78 cents per
3:48
pound now I buy a lot of my candy on
3:50
Amazon but I also buy at a wholesale
3:52
store called WinCo that's here in Idaho
3:55
what I'm going to do with these AirHeads
3:57
is I'm going to unwrap them but I'm also
3:59
going to use this knife I don't normally
4:00
have this small of a knife to cut but I
4:04
forgot my larger knife when I started
4:06
this video so what we're going to do is
4:08
we're going to quickly unwrap these uh
4:10
these air heads very quickly and that is
4:13
the tedious part about freeze drying you
4:15
have to kind of find really quick fast
4:18
ways to unwrap candies because most
4:21
candies are wrapped in some type of
4:23
wrapper over and you just kind of have
4:26
to unwrap it so there's sometimes it's
4:28
not an easy way to unwrap these the
4:31
purposes of this video I am just going
4:33
to unwrap just a few of these and we're
4:36
going to cut them and put them on one
4:38
tray and I'm also going to do whole
4:40
AirHeads just to see what the difference
4:42
is of how they expand by the way if you
4:46
are new to freeze drying or you haven't
4:48
connected yourself to some of these
4:50
Facebook forums there is really a lot
4:53
that has already been done and
4:56
everyone's kind of figured out things
4:57
now it's not really Trade Secrets
5:01
because sooner or later somebody's going
5:02
to know how to do air heads and set the
5:05
right settings and all that type of
5:06
stuff I share a lot of my knowledge
5:08
because I just couldn't find a lot of
5:12
video information online when I started
5:15
my business three years ago in 2020 and
5:18
I just felt like people needed to see
5:20
what was actually going on in this
5:22
freeze drying business world and I
5:24
wanted to make high quality videos and I
5:26
appreciate every single one of you who
5:28
has subscribed as well as those who have
5:30
commented now all right so I've got
5:33
these uh full-size ones what I'm going
5:36
to do is I'm going to cut
5:38
uh these in half and we're just going to
5:41
see how the halves go hopefully you can
5:44
see that I'm just I'm just cutting each
5:46
one in half trying to be as equal as
5:48
possible if you're in hot humid space
5:50
make sure you're keeping your candy in a
5:53
room temperature area or in your house
5:56
or some type of temperature controlled
5:58
area because this candy can get really
6:01
soft and it's going to make it even more
6:02
and more impossible to get these candy
6:07
off uh when they're sticking to the
6:09
wrapper because they're warm
6:12
and so that's what my tip would be for
6:15
you so as you can see I'm just putting
6:17
the halves on the tray all right so
6:19
these were in half so we're going to
6:21
keep these halves for the Airheads in
6:23
this type of space just to see what
6:24
happens we'll put it in the freeze dryer
6:26
all right now let's go ahead and do the
6:28
air heads but let's do them completely
6:30
whole and see what happens so I'm just
6:33
gonna unwrap some of these I'll put it
6:54
full-size air hens so let's go ahead and
6:57
put this in the freeze dryer all right
6:58
so the trays are in for the AirHeads now
7:00
again what I set the temperature to was
7:02
150 degrees because I just started a new
7:05
Candy batch it's already in candy mode
7:08
previously from the lemon heads that I
7:10
just did now I've already done a candy
7:12
batch like I said so what we're going to
7:14
do is we've already closed the drain
7:15
valve the high temperature candy process
7:18
we're going to press continue and what
7:21
we're going to do on air hands because
7:23
they're already soft they're not like
7:25
the hard candies like the lemon heads is
7:28
we're going to actually skip the tray
7:31
warming and it's just going to start
7:32
drying the candy and we've got the
7:34
drying time now at five hours now this
7:37
is the evening time so I'm going to go
7:38
ahead and let this run let's do eight
7:41
hours and that way I can come back in
7:43
the morning and see how it does I
7:45
normally would probably do this at three
7:47
hours just so I can keep doing candies
7:49
but we'll just keep it at the 8 hour and
7:51
29 Mark all right the cycle is complete
7:54
that we have the air heads in let's go
7:55
ahead and take a look to see what
7:57
happens when you freeze dry Airhead all
7:59
right here's the AirHeads that we cut in
8:01
half wow they puffed up a little bit
8:04
this has a little bit of a puff to it
8:06
we're going to see how they taste in a
8:08
this is the ones that we left whole
8:14
and this is what happens to Airheads if
8:17
you put them into third all right so
8:19
let's just look at the size of what we
8:22
did here so we had the full size this is
8:25
cut in half and this is in third so
8:27
really not much of a difference in the
8:29
halfs and the thirds but definitely on
8:31
the full size now all of these were the
8:34
three different trays that we did those
8:36
were the thirds holes and half so let's
8:39
go do a taste test all right here's the
8:41
taste test with the full size airhead
8:45
all right the texture is definitely
8:48
crunchy I really like this the flavor
8:50
kind of almost after the full bite in
8:54
your mouth actually this is really this
8:55
is really tasty I really like this now
8:58
that's the full size and then this is
9:04
all right nothing really changes on the
9:06
wow lots of sugar that's why I don't do
9:09
a whole lot of candies added onto my
9:11
product line all right after freeze
9:13
drying these AirHeads here's a couple of
9:14
conclusions that I have one you don't
9:17
need to cut the AirHeads I thought you
9:18
needed to because you would have more
9:20
bite-sized pieces but looking at the
9:22
full size it really didn't puff up that
9:25
much that I could still fit quite a few
9:27
in a single bag of the five and a half
9:29
by eight size bags that I use so I don't
9:32
think you need to really cut these but
9:34
if you were to cut these I think it
9:36
would create a lot more bite-sized
9:37
pieces in these squares you'd probably
9:39
see in the window bags you'd probably
9:41
see a lot more different flavors and
9:43
colors which always brings out a good
9:45
amount of marketing and brand for the
9:47
product that someone is going to buy
9:48
because they don't really know what to
9:49
expect now as far as air heads go for
9:52
the cost that's something you got to
9:53
figure out I still would probably stick
9:55
with my two dollars per net ounce or
9:58
probably stick with my eight to nine
10:00
dollar per bag price for the AirHeads
10:03
now just to recap on the freeze dryer
10:05
settings we did the AirHeads at 100 150
10:07
degrees and we did not warm the trays so
10:10
these performed fine at 150 degrees I
10:13
almost think you could go down 140 and
10:15
not even have to warm the trays either
10:17
now we did run it for about eight hours
10:19
because it was overnight but I don't
10:21
think you need to do that either I'd
10:22
probably run the AirHeads for about
10:24
three or four hours and they're probably
10:25
puff up fine if they don't and you taste
10:28
test and they're still a little bit
10:28
chewy just run them a little bit longer
10:30
