Prepare the Tripe: Rinse the beef tripe thoroughly under cold water. In a large pot, combine the tripe and pig's foot (if using), cover with water, and bring to a boil. Boil for 10 minutes, then drain and rinse again. Cook the Soup: Return the tripe (and pig's foot) to the pot. Add the chopped onion, minced garlic, salt, black pepper, oregano, cumin, crushed red pepper flakes, broth, hominy, bay leaves, and paprika. Simmer: Bring to a boil, then reduce the heat and simmer for 2-3 hours, or until the tripe is tender and the flavors have melded together. Finish: Remove the pig's foot and bay leaves from the pot. Taste and adjust seasoning if needed. Serve: Ladle the menudo into bowls and garnish with chopped cilantro. Serve with lime wedges and corn tortillas on the side.
