IngredientsFor the Broth:1/2 cup soy sauce
1/4 cup mirin (sweet rice wine)
1/4 cup sake
2 tbsp sugar
1 cup dashi or water
Main Ingredients:1 lb thinly sliced beef (ribeye or sirloin)
1 block firm tofu, cut into cubes
1 small napa cabbage, chopped
1 bunch shungiku (chrysanthemum greens) or spinach
1/2 onion, sliced
1/2 cup sliced shiitake or enoki mushrooms
1 small carrot, sliced
1 bunch green onions, cut into 2-inch pieces
1 pack shirataki (yam noodles), drained
2 raw eggs (for dipping, optional)
Instructions Prepare the Broth: In a small saucepan, combine soy sauce, mirin, sake, sugar, and dashi. Heat over medium-low until the sugar dissolves. Set aside.
Heat the Pot: Place a shallow iron pot or large skillet over medium heat. Lightly grease the pot with a little beef fat or oil.
