hey guys welcome to a new episode on
0:02
cooking with an odd SL and today we'll
0:04
be making some Punjabi lobia now these
0:06
are basically some black eyed peas which
0:09
I've soaked overnight got me really
0:12
fragrant and delicious because of whole
0:14
spices like Bailey's black cardamom and
0:17
cinnamon we're gonna have this let some
0:19
rice and some crispy potatoes my
0:22
favorite so let's get started right now
0:24
so here are the Black Eyed Peas and
0:26
they've been soaking overnight you want
0:29
to soak it for at least eight hours so
0:31
I'm gonna cook my black-eyed peas in my
0:33
pressure cooker I'm gonna be putting all
0:35
our whole spices your bay leaf just
0:38
cinnamon your black cardamom right in
0:40
there with some salt and cook this until
0:43
it's nice and tender I usually cook it
0:46
for about five to six Bissell's on high
0:49
heat and then what you want to do is let
0:52
it naturally release the pressure know
0:55
if you in the case that you don't have a
0:57
pressure cooker you might want to simmer
1:00
this in a pot of water and it's gonna
1:03
take way longer maybe like forty minutes
1:06
or an hour I would personally do not
1:09
like to do that it's much more easier
1:11
convenient and faster to use the
1:14
pressure cooker you should buy one
1:16
it really helps up and it really makes
1:18
the time in the kitchen worthwhile so
1:20
add some water and enough water till
1:23
it's about an inch or two above then on
1:26
add in your whole spices
1:27
that's your cinnamon bay leaf black
1:31
cardamom see you later with some salt
1:33
the salt helps to cook the black-eyed
1:36
peas and lastly a little touch of
1:40
teamwork so take your onion ginger and
1:43
garlic and grind it into a paste now do
1:46
the same with your tomatoes and set this
1:48
aside and let's start heating up a pan
1:50
on medium heat do the same with your
1:52
tomatoes and set this aside and let's
1:54
start heating up a pan on medium heat
1:56
now I'm just thinking today you can
1:58
always use olive oil doesn't affect that
2:00
much because that's how my mom used to
2:02
make it and it's pay delicious that way
2:04
too but I find that cooking with key
2:07
gives it a more bassy more Indian twist
2:11
so here I'm melting some ghee in my pot
2:13
here you can use a wok like this or a
2:17
deep sided pan anything that can hold
2:21
so my guillotine eating on medium heat
2:24
and what's your key is hot
2:26
adding some cumin seeds and let these
2:31
croteau until reddish brown also adding
2:33
some ink and once your cumin has stone
2:37
reddish brown add in your onion ginger
2:40
and garlic paste now cook this until
2:42
it's turned a bit dry and it becomes
2:45
light brown color now at this stage when
2:49
you mix just done kind of brown but it's
2:52
still kind of wet and some tumeric and
2:54
ground cumin mix it well and continue
2:59
cooking until it's dry so now as you can
3:01
see here you'll make sure that's become
3:03
dry it's become Browder now is the
3:07
perfect time to add in your tomatoes
3:11
give it a nice mix and bring this up to
3:14
a simmer now add in some salt and then
3:17
red chili powder mix well cover it let
3:21
this cook for about ten minutes or until
3:23
you see the key releasing from the sides
3:26
now you're gonna end up with some masala
3:28
if you like this now smells really good
3:31
right now so now what you want to do is
3:33
take your Black Eyed Peas
3:34
soft ooh pressure cooker you're gonna
3:36
end up with something like this super
3:39
tender super nice I just dumped all this
3:41
with the water into your pan here now
3:45
you really want to reserve the water but
3:48
you get after you've boiled the lobia do
3:50
not throw that away all the flavor that
3:52
you get in this dish is from that water
3:54
that the lobia was cooking in it also
3:57
helps to give the dish that nice brown
4:00
color you cannot replicate that with any
4:02
spice with stock with nothing so now
4:05
after you've added the lobia and the
4:07
water just let this slowly simmer until
4:09
it gets thick and until it has the
4:11
consistency which you like now once it's
4:14
up to a simmer add in about half a
4:16
teaspoon of mango powder along with
4:19
about a teaspoon of garam masala
4:22
if there's some mix just spin about
4:25
20-25 minutes and I like this now it's a
4:29
nice thick consistency not too thick not
4:31
too thin and that's basically ready just
4:37
taste this season it for salt according
4:40
to what you prefer and just simply
4:43
garnish this with some cilantro and
4:46
enjoy so there you have it guys
4:49
this dish is something which I brought
4:52
back home from school because my school
4:54
cafeteria served this to me and I was
4:57
like what is that and it was just the
4:59
most amazing thing that somehow found
5:01
out what the name of the bean was I told
5:04
my mom to make it and she introduced me
5:06
to this awesome version which is really
5:08
tasty and I can't believe that could
5:11
recreate what my mom did and this is
5:13
super delicious and I'm sure you're
