hey guys today I'll be making for you
0:02
from delicious P onion and lemon peel
0:07
off with some lucky style chicken and
0:10
some amazing lemony crow potatoes
0:14
I'm not so this is completely it's going
0:17
to be fresh Greek it's going to be
0:19
delicious
0:20
so let's get started right now so we're
0:22
here I have about 400 grams of chicken
0:24
and here I have about 473 five hundred
0:30
mils of cold water so we're going to
0:33
make a brine solution first and we're
0:35
going to salt our chicken in for 30
0:37
minutes through this water I'm going to
0:39
add in a tablespoon of salt and dissolve
0:44
the salt in the water and then I have
0:46
chicken so next I'm going to add in my
0:51
chicken and make sure it's completely
0:54
submerged so we want to keep our chicken
0:59
in this brine solution for 30 minutes
1:01
but we prep our other ingredients so to
1:04
make the souvlaki style chicken you
1:07
don't need your chicken which has been
1:08
in the brine for about 30 minutes now
1:10
lemon juice olive oil chopped parsley
1:13
fresh lemon zest freshly ground pepper
1:17
oregano and some honey
1:20
so next drain your chicken and put it in
1:23
another Bowl so next add in your olive
1:26
oil lemon juice lemon zest parsley
1:34
oregano honey some fresh pepper we give
1:40
this a nice mix now put this aside and
1:43
turn on the oven at 425 and we cook the
1:47
potatoes first and start off with the
1:49
rice next work on the potatoes here have
1:51
some baby red potatoes itself cut in
1:54
half and to this I'm going to add salt
1:56
and pepper a nice sprinkling of cayenne
1:59
pepper
2:02
to add that heat some olive oil really
2:06
help all those spices fix the potato and
2:08
spring a lot of flavor
2:09
now just toss get all that spice on the
2:14
potato so potatoes are all mixed up now
2:18
I'm going to line a baking sheet with
2:20
some aluminium foil so I put the
2:22
potatoes on my tray here they look
2:24
absolutely beautiful
2:26
I'm going to go in the oven at 425 for
2:28
about 25 to 30 minutes so now to cook
2:32
your boss my device peel off with some
2:34
peas lemon and onions you're going to
2:36
need some fresh lemon zest clove garlic
2:40
some peas finely chopped onions and some
2:44
basmati rice so now let's get started on
2:47
cooking this pilaf so here I have a
2:50
saucepan heating on medium heat and into
2:52
this I'm going to add in about a
2:54
tablespoon of olive oil and now we want
2:57
to let this heat up so my oil is heated
2:59
now and I'm not adding my onion and a
3:03
small pinch of salt now you want to cook
3:07
this for about five minutes until the
3:10
onions start to become soft so next
3:12
we're going to stir in alright mince our
3:16
clove of garlic in there and our lemon
3:19
zest and a small sprinting of red chili
3:23
flakes the stores around and you want to
3:26
kind of fry our rice in the oil until it
3:29
begins to turn translucent make sure to
3:34
get it off from the corners and make
3:36
sure it's really kind of cooking in that
3:39
oil way soon as you see the edges the
3:42
grains of the rice don't translucent you
3:45
know it's ready use two cups of cold
3:48
water and let us come up to a simmer now
3:52
as you can see a water has come up to a
3:54
simmer
3:54
I'm not down the heat down to medium-low
3:56
and put this lid on and let this cook
4:02
for about 15 minutes
4:04
what potatoes are done and you can see
4:06
it has a nice brown crust and that's
4:10
perfect now it took only 20 minutes
4:13
they're really hot
4:14
and the cooked completely now going to
4:17
let this rest and we're going to finish
4:20
these up when I stricken it's done
4:21
cooking so for my checking here my oven
4:24
is in royal mode and I've laid out my
4:27
chicken on my baking sheet over here I'm
4:30
going to put this in the oven I'm going
4:32
to be going to closely monitor and one
4:35
make sure doesn't burn this is going to
4:37
cook really quickly under the broiler
4:38
and it's going to help develop some nice
4:41
char marks on our chicken which is going
4:42
to add a lot of flavor it's been about
4:45
10 to 12 minutes and our chicken is
4:47
basically cooked this point I want to
4:49
sort up put some of this resolve
4:52
marinade on the chicken just add some
4:57
extra flavor before we finish this and
5:00
you want to just Brown our chicken just
5:05
to give it that nice look put it back in
5:08
the oven so what a right it is already
5:11
now now all you want to do is finish
5:14
this with some of our peas and there's a
5:18
spork and just kind of fluff this into
5:21
the rice your class is perfect just set
5:27
this aside put the lid on and wait for
5:30
your chicken to be finished so chicken
5:32
is already it has some nice nice brown
5:35
marks so now my potatoes I've warmed up
5:37
again we want to finish this with some
5:38
fresh lemon juice some freshly chopped
5:43
parsley give this a nice toss and let's
5:47
start plating there you have it guys
